iOS: Add "use built-in mic" option (or iOS 26 studio-quality AirPods recording support)

When dictating with AirPods connected, iOS routes the mic to AirPods over Bluetooth HFP, which caps audio quality at phone-call bandwidth — transcription accuracy drops noticeably compared to the iPhone's built-in mic. The Mac app already has an input-device picker; the iOS app has no equivalent. Request: either (a) a toggle to force the iPhone's built-in mic while AirPods stay connected for playback, or (b) support for Apple's studio-quality AirPods recording API (iOS 26, H2-chip AirPods). Use case: dictating long-form prompts while walking. For reference, Wispr Flow's iOS app already ships a "Use built-in mic" toggle for exactly this reason.
