Feature request: Mistral AI as LLM provider option.

SuperWhisper already offers local transcription for privacy. But the LLM step only supports US providers. For European users with sensitive content (HR, legal, healthcare), this creates a gap.Mistral is European (GDPR), doesn’t train on user data, and their API is OpenAI-compatible — so integration should be relatively straightforward.Would complete the “fully private” workflow many of us are looking for. Thanks!
