Confidentiality on Windows

I am a lawyer in Belgium and bound by the strictest confidentiality. I work on a Windows PC and I have downloaded Super Whisper. I don't see which language model and which voice model to select in order to have confidentiality. I have the choice between ChatGPT or Claude, which already implies that everything is installed in the Cloud. As for the voice, Ultra Turbo V3, for example, which is downloaded on m computer, does not work. Perhaps it's because I'm using it in French. Thank you in advance for your explanations.
